The Rookery Pub & Cafe at Cable Nature Lodge is nearing completion and a grand opening is planned for Memorial Day weekend. Executive Chef Eric Raymond is creating a bold imaginative menu of flavorful food, with ingredients procured from local producers to the extent possible. Chef Eric is a graduate of the Culinary Institute of America in Hyde Park, New York. He'll be serving up his delectable dishes in the relaxing smoke-free ambiance of one of the warmest and most distinctive eating and drinking venues in the Wisconsin Northwoods.

Whitefish La Papillote
Toasted Israeli and orange miso glaze
Cornish Game Hen
Roasted bone in Cornish game hen, edamame soybeans,
Potato quinoa cake and saffron infused broth
Curried Bean Curd
Seared bean curd, sautéed vegetables, wild rice
And coconut red curry sauce
Bison n’ Beans
Seared Northstar Farm’s bison sirloin, green beans,

In addition to great food and fine spirits the Rookery also will be the exclusive Northwest Wisconsin gallery for noted Wisconsin nature and wildlife photographer Kristen Westlake. Two dozen of Kristen's fine art images in sizes up to five feet across will adorn the walls of the restaurant while dozens more will rotate on the pub's 50 inch plasma display screen.
